Who says pumpkin is just for fall? I absolutely love fall foods, pumpkin, cinnamon, squash it is all delicious but I don’t think it needs to be limited to the fall season, why not try it for summer. So while I was thinking about what to make with my Kozy Shack rice pudding, I wanted to create something that would work for any season. This amazing little parfait is wonderful in the hot summer weather as well as comforting in the fall. It is a universal dessert everyone will love.
August 9th was National Rice Pudding Day, but if you missed it there is no need to worry. We all know that pudding can be enjoyed every day of the year! In honor of this holiday I created this delicious and light dessert for my husband and myself. It is pretty simple, but don’t let that fool you. It is packed with flavor! I love the nutritional value of adding some pumpkin to my dessert as well, and as an added bonus this is a GLUTEN FREE dessert. My husband has recently gone gluten free so we love finding ways to still indulge in dessert.
- Kozy Shack Rice Pudding
- Pumpkin Puree, or Pumpkin Pie Puree
- Whipped Cream
- Layer rice pudding and pumpkin in a parfait glass and top with whipped cream. Sprinkle cinnamon on top for garnish!
