
Instant Pot Chicken Gnocchi
One of my favorite things about eating at Olive Garden is ordering one of their delicious soups. I think they have some of the best soups on any restaurant menu these days. The Olive Garden Chicken Gnocchi is probably my favorite. I am a sucker for a potato dumpling nestled in a delicious broth with spinach and chicken. So, we decided to make this Olive Garden Copycat version of their famous soup!

Chicken Gnocchi Soup Recipe
I knew I had to learn how to create this Olive Garden soup recipe at home so I got out my trusty Instant Pot and got to work. I use store-bought gnocchi but if you make your own little potato dumplings you can use those too. One day I will make my own!
I love to pressure cook soups because it makes them seem like they have been cooking all day long when really it takes just minutes. Normally I would could this soup on the stovetop for over 30 minutes but it takes just 4 minutes in a pressure cooker. It is the perfect family-friendly Instant Pot meal.

Olive Garden Chicken Gnocchi Soup Recipe
Check out the printable recipe card for step-by-step instructions! But here is what you’ll need to get started.
Ingredients:
- OLIVE OIL – To saute chicken and veggies. We like to use EVOO in a pressure cooker because of it’s high smoke point.
- CHICKEN BREAST – Boneless skinless chicken breasts. Cubed or diced. Or, you can shred it after cooking if you’d like. If you’d like, you can substitute for boneless skinless chicken thighs as well.
- CELERY
- ONION

CHICKEN BROTH – You can substitute for vegetable broth is that is what you have on hand.
- CARROTS – We like the matchstick carrots, but you can slice or dice your carrots in whatever way suits you.
- THYME
- HALF AND HALF – For a richer, creamy chicken gnocchi soup, you can use heavy cream.
- GNOCCHI – We used normal potato gnocchi. But you can use Sweet Potato Gnocchi if you’d like! We used this brand. But you can use whatever you’d like.
- SPINACH – Fresh Spinach. I would not use frozen spinach in this recipe.
- SALT AND PEPPER – Optional. To taste.
How To Make Chicken Gnocchi Soup In An Instant Pot
- Place oil, chicken, onion, and celery into your pressure cooker. Saute the ingredients until meat is brown.
- Add chicken broth, carrots, and thyme and mix well. Place the lid onto the instant pot and seal shut.
- Close the pressure release valve. Set the instant pot to manual, high pressure for 4 minutes.
When the cooking cycle is complete, quick release pressure and open the lid.
- Set the Instant Pot to saute and carefully stir in spinach, half and half and gnocchi.
- Continue to heat the soup on the saute function until boiling. Boil and stir frequently for about 3 minutes or until gnocchi is done. Serve immediately.
Can I make Chicken Gnocchi Soup in a Slow Cooker?

Instant Pot Olive Garden Chicken Gnocchi Soup
Ingredients
- 1 tablespoon oil
- 1-1/2 lbs chicken breast cubed
- 1/2 cup chopped celery
- 1/2 cup chopped onion
- 2 cups chicken broth
- 1 cup matchstick carrots
- 1 teaspoon thyme
- 3 cups half and half
- 1 package 16 oz, gnocchi
- 2 cups fresh spinach
Instructions
- Place oil, chicken, onion, and celery into your pressure cooker. Saute the ingredients until meat is brown.
- Add chicken broth, carrots, and thyme and mix well. Place the lid onto the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 4 minutes. When the cooking cycle is complete, quick release pressure and open the lid.

I am a believer in making recipes my own so I say if you don’t like thyme, skip it! You could try oregano instead.

Yes, you would put everything except the half and half, gnocchi, and spinach in a slow cooker and cook on LOW for 6-8 hours. Add half and half and gnocchi and turn the slow cooker to high for an additional 30 minutes. Stir the spinach into the soup and allow to wilt, about 2-3 minutes and enjoy!

What could I do to make the broth just a little thicker ? It was so tasty but I kind like the idea of a slightly thicker broth.

You could make a cornstarch slurry: 2 tablespoons cornstarch dissolved in 1/4 cup water and add it at the end, bring the soup to a boil on the saute mode until it is as thick as you would like.

I like the quick and easy style of this recipe but holy cow the thyme! That’s all I can taste. I’ve added tons of salt, pepper, garlic powder and still all I can taste is thyme. Maybe 1/4 teaspoon if anything next time.

Yes you can add it. I would add a cornstarch slurry at the end. Turn the pot to saute, add the slurry when you add the cream or milk and bring it to a boil, that should thicken it for you.

It calls for 2 cups fresh spinach. Would you use 2 8 oz bags of Spinach or should I just measure with cups? It makes me nervous that 2 bags would be so much, but technically that is 2 cups. Hehe. 🙂 Thanks!

I’ve never had Olive Garden’s chicken gnocchi soup so I don’t know if this is similar or not. Regardless, it was very good. I followed the recipe as is except I did add some kosher saltand used vegetable broth instead of chicken broth. I have a daughter that is a vegetarian (she did not eat with us on the night we made this) and because of that, I make my own vegetable broth. When I make it, I do not add salt to it. I suppose that if someone was making this with the chicken broth, and it was already salted, they could skip adding salt. Really good and we will make again.

Flavor was great! I did the slow cooker option and I actually cooked it on high for 4 hours. It turned out really well! My only complaint was the soup was very thin/watery, and not nice and thick like Olive Garden’s. I did a cornstarch slurry though and that fixed the issue perfectly! Great recipe!
