Instant Pot Chicken and Rice
We made our healthier version of chicken and rice using brown rice but we give directions for white rice as well. I have tried it both ways and it is equally as good! Cooking times are different for brown and white rice. For step-by-step instructions, check out the printable recipe card below. But here is what you’ll need to get started.
Instant Pot Chicken and Rice Ingredients
- CHICKEN BREAST – 1 lb of Boneless Skinless Chicken Breast or Chicken Tenders. If you’d like, you can also use boneless skinless chicken thighs as well.
- OLIVE OIL – You will be using the saute function of the Instant Pot to saute the chicken in oil. We like to use Extra Virgin Olive Oil for this because of it’s high smoke point.
- MUSHROOMS – Sliced. Any kind will work. Cremini, button, porcini, portobello are all fine.
- CARROTS – We used matchstick carrots. But you can dice or slice them however you’d want to.
- ONIONS – Diced. We use yellow onions because of it’s softer, milder flavor.
- GARLIC – Minced.
- THYME –
- SALT AND PEPPER – To taste.
- CHICKEN BROTH – If you need to substitute for vegetable broth, you can.
- RICE – We used brown rice. But you can use white rice as well. Read below for cooking time differences.
How To Make Instant Pot Chicken And Rice
- Place oil and chicken in the Instant Pot and saute, browning each side of the chicken.
- Add mushrooms, carrots, onions, garlic, and spices into the pot.
- Pour in broth and rice and stir and mix well.
- Place the lid on the instant pot and seal shut. Close the pressure release valve.
- For brown rice (package will say it needs 35-40 minutes to cook) set the Instant Pot to manual, high pressure for 20 minutes. For white rice (package will say it needs 15-20 minutes to cook), set the Instant Pot to manual, high pressure for 10 minutes.
- When the cooking cycle is complete, quick release pressure and open pot. Let sit for a few minutes and use 2 forks to shred chicken and mix together.
- Serve topped with fresh chopped parsley if desired.
Storage, Leftovers and Freezing
You can store leftovers in an airtight container in your refrigerator. They should be good for up to 4 days. This recipe reheats just fine in the microwave.
To freeze, allow to fully cool and put in a freezer safe container. It should be safe your freezer for up to 4 months. Allow to thaw overnight in the refrigerator.
Notes, Tips and FAQs
- MY PRESSURE COOKER WON’T COME TO PRESSURE – Make sure the safety valve is in the locked position, not the release position.
- BE CAREFUL WHEN LETTING OUT THE STEAM – When you quick release the pressure from the sealing position, very hot steam quickly comes out. Keep your face and hands clear.

Can you do this with frozen chicken? Would the cook time need to be adjusted?

Hi – This looks delicious!! I’m not being a smart Alec, but as a brand new instant pot user , I am confused by this sentence – “needs 35-40 minutes to cooset the Instant Pot to manual,”. Oh wait, I figured it out…… cooset should say ‘cook) set the Instant pot to manual. Thank you for sharing your recipe – maybe you could make this change, please.

Made this tonight for dinner and wow it was so tasty! I tripled the recipe and was only one serving left for lunch tomorrow. Even the grandkids loved it and had seconds. To be honest I almost didn’t make this because I thought it looked kind of blah but I was sooooo wrong. Can’t wait to make it again
