This Breakfast Cheesy Ham and Tater Tot Casserole Recipe is a frugal and easy recipe for any day of the week.  Filled with ham, cheese, potatoes and eggs, the entire family will love this recipe. It also is perfect for feeding a crowd at brunch!

Easy Breakfast Casserole

Casserole recipes are perfect for feeding a large crowd making them ideal for holiday gatherings. My family and I have been enjoying this breakfast casserole every year on Christmas morning. I call it Christmas Casserole and the kids make sure that its in the oven before opening our stockings.

It is a Christmas tradition!

Easy Breakfast Recipes

Cheesy Ham and Tater Tot Casserole (AKA Christmas Casserole)

Ingredients

  • 10 Eggs
  • 3/4 cup Milk
  • 8 oz Diced Ham
  • 1/2 Diced Onion
  • 1 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1/2 tsp Paprika
  • Salt and Pepper
  • 2 cups shredded cheese
  • 32-ounce bag of Frozen Tater Tots
  • 2 Green Onions Sliced

Breakfast Casserole Ingredients

Directions

  1. Preheat oven to 350 degrees.
  2. In a large casserole dish pour tater tots in the bottom.
  3. Sprinkle diced ham and diced onions on top of the tater tots, set aside. tater tot caserole
  4. In a large mixing bowl whisk together eggs, milk, garlic powder, onion powder, paprika and salt and pepper.
  5. Pour egg mixture over tater tots and top with cheese.Ham egg and tater tot casserole
  6. Bake in oven for 40-50 minutes until eggs are fully cooked through.
  7. Top with green onion and enjoy!
