Instant Pot Creamy Chicken

Made of simple, wholesome ingredients, this Instant Pot Creamy Chicken is comfort food at it’s best. Tender chicken, tomatoes and Italian Seasoning are blended together with a creamy sauce  in your Pressure Cooker.

Instant Pot Family Dinners

We love our Instant Pot because it’s just so darn easy to me a a family meal in just minutes! We love to make “Comfort Food” recipes in our Pressure Cooker for a hearty family dinner that will be sure to have leftovers for lunch tomorrow. Some of our favorites include this rich and hearty Instant Pot Mississippi Pot Roast and this Instant Pot Lazy Lasagna.

But I’ve found that chicken always comes out super tender and delicious in your Pressure Cooker. So, we’ve certainly made some chicken dishes as well, such as Instant Pot Honey Garlic Chicken or Instant Pot Chicken and Rice.

Today, we are gonna keep the chicken train rolling with this awesome recipe for Instant Pot Creamy Chicken!

Instant Pot Creamy Chicken

This is a super recipe that only has a handful of simple ingredients that you most likely already have in your kitchen. Ready to get started? Here’s what you’ll need!

  • 2 chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/3 cup half and half
  • 1 small tomato, chopped
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons cornstarch, dissolved in 2 tablespoons cold water

Instant Pot Creamy Chicken Recipe can be served over noodles or rice.

What To Serve With Instant Pot Creamy Chicken?

Honestly, this dish is great served all by it’s lonesome. But some serving suggestions would include putting it over egg noodles, rice, a baked potato or even making a sandwich with it!

Notes, Tips and Variations

  • You can certainly add some veggies to this recipe. Corn, mushrooms, bell peppers, zucchini or broccoli would all work!
  • We made this recipe with two chicken breasts. But, honestly, there was enough of the cream sauce if we had add two more. So, if you’re feeding 4, all you’ll need to do is add two more chicken breasts.

Ingredients
  • 2 chicken breasts
  • 1 cup chicken broth
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1/3 cup half and half
  • 1 small tomato chopped
  • 2 tablespoons chopped fresh basil
  • 2 tablespoons cornstarch dissolved in 2 tablespoons cold water
Instructions
  1. Add chicken breast and broth to the instant pot. Sprinkle with spices. Place the lid on the instant pot and seal shut. Close the pressure release valve. Set to manual, high pressure for 8 minutes. When cooking cycle is complete, let pressure release naturally for 5 minutes. Carefully open pot. Remove chicken and set aside (keep warm).
  2. Add half and half, tomatoes, basil and cornstarch slurry to pot and set to saute. Mix continuously until mixture begins to bubble and thicken. Remove from heat.
  3. Slice chicken and pour sauce on top before serving.
