- 2 chicken breasts
- 1 cup chicken broth
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/3 cup half and half
- 1 small tomato, chopped
- 2 tablespoons chopped fresh basil
- 2 tablespoons cornstarch, dissolved in 2 tablespoons cold water

Notes, Tips and Variations
- ADD VEGETABLES – You can certainly stir in some veggies to this recipe. Corn, mushrooms, onions, bell peppers, carrots, zucchini or broccoli would all work!
- DOUBLE THE CHICKEN – We made this recipe with two chicken breasts. But, honestly, there was enough of the cream sauce if we had add two more. So, if you’re feeding 4, all you’ll need to do is add two more chicken breasts.
- CAN YOU USE CHICKEN THIGHS? – Yes! We love cooking boneless chicken thighs in the Instant Pot. They come out insanely tender.
- MAKE IT THICKER AND CREAMIER? – Substitute the half and half for heavy cream.

Instant Pot Creamy Chicken
Ingredients
- 2 chicken breasts
- 1 cup chicken broth
- 1 tablespoon Italian seasoning
- 1 teaspoon garlic powder
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1/3 cup half and half
- 1 small tomato chopped
- 2 tablespoons chopped fresh basil
- 2 tablespoons cornstarch dissolved in 2 tablespoons cold water
Instructions
- Add chicken breast and broth to the instant pot. Sprinkle with spices. Place the lid on the instant pot and seal shut. Close the pressure release valve. Set to manual, high pressure for 8 minutes. When cooking cycle is complete, let pressure release naturally for 5 minutes. Carefully open pot. Remove chicken and set aside (keep warm).
- Add half and half, tomatoes, basil and cornstarch slurry to pot and set to saute. Mix continuously until mixture begins to bubble and thicken. Remove from heat.
- Slice chicken and pour sauce on top before serving.
