The great state of Indiana is known for its crispy breaded pork tenderloin sandwiches. Moms Breaded Pork Tenderloin Recipe is a classic and will leave you craving another! This fair food favorite is delicious and isn’t hard to replicate!
In July, Kraft Foods will be launching an interactive microsite on www.Outstandwich.com that will act as a virtual trip around the country, as we search for the best regional sandwiches. I was honored to be asked to create a recipe that represents the state of Indiana.
Moms Breaded Pork Tenderloin Recipe
I have lived in Indiana for 12 years this month, and since I have lived here I have eaten a lot of great sandwiches. An Indiana favorite (and truly a Hoosier original) is the Fried Pork Tenderloin Sandwich. You can get a Pork Tenderloin sandwich almost anywhere here in Indiana, but I experience it at the State Fair a few years back. While there are many variations of the recipe (like our grilled pork tenderloin sandwich) this is my moms breaded pork tenderloin recipe!
Indiana Hoosier Pork Tenderloin Sandwich
Ingredients
- 1lb Pork Tenderloin
- 3/4 Cup Flour
- 1 tsp fresh ground pepper
- 1 tsp seasoned salt (you can also use Emeril’s essence or I used Rocky Mountain Seasoning from Penzeys)
- 1 clove garlic (optional)
- 1-quart buttermilk
- 2 eggs
- 1 package Panko Bread Crumbs
- Canola Oil for frying
- 4 Hamburger Buns
- Tomato, Lettuce, and condiments of your choosing
Begin by cutting the tenderloin into 4 large slices about 1 1/2 inches – 2 inches wide. Butterfly the pieces of pork and put it between two pieces of Saran Wrap (I also did it inside a large Ziploc bag and it worked great). Using the smooth side of a meat tenderizer mallet, pound the pieces of tenderloin until they are about 1/4 in thick.
Prepare your marinade by combining the buttermilk, eggs, and garlic into a marinating dish. Combine flour, pepper, and seasonings together in a dish big enough for the pounded tenderloin pieces to fit in. Coat each piece of tenderloin with the flour mixture and place in the marinade. Marinade in your refrigerator overnight (this is also optional but will make for a very tender pork tenderloin).
When you are ready to fry, first coat the tenderloins on both sides with Panko Breadcrumbs. If you don’t have Panko you can use regular bread crumbs it just won’t be as crunchy (or tasty). In a large skillet, heat enough canola oil to cover the tenderloins (about 1/2 inch) to 360 degrees. Fry the pork tenderloin for about 3 minutes on each side, one at a time until golden brown.
Serve on a hamburger bun with a slice of tomato, lettuce and your favorite condiments. Enjoy!

Buffalo burgers. Nothing really fancy. Prepared just like a regular hamburger. Buffalo meat has much less fat than cattle and tends to be a little dry if you don’t hit the condiments hard. Buffalo is an acquired taste… But, it is really good…

BBQ your chicken breasts with Kraft onion bbq sauce, before your chicken is done add Kraft cheddar cheese slices on top of the burgers until melted. While your burgers are cooking mix together Ranch salad dressing and Mayo (half & half or to tatse) cut up tomatoes & lettuce. Here in the south it’s slow cooked pulled pork in a vinegar based “bbq” sauce for pig. The pork is best smoked, but you can put the butt in a slow cooker and cook all day, then shred and return to cooker and add the sauce. Serve on buns with a coleslaw side.

Tuna Salad Sandwich.
Lettuce, Pickel Juice, White Albacore Tuna, Chopped White Onions, Chopped Bell Pepper, Salt & Pepper, Mayonaise. and white bread.
Add all ingredients together except for the Lettuce. Add a couple peices of lettuce to your sandwich bread.Spread the tuna mixture on bread and slice into four squares then add toothpicks to each peice, if desired. My favorite local sandwich is the spiedie, which origninated in the Binghamton NY area, not far from where I live. This sandwich is white meat (traditionally pork, chicken or lamb) marinated for a day and then grilled and served on Italian bread. It is traditionally served with no condiments.
Ingredients:
2 lbs pork, cut into 1 inch cubes
1 c. olive oil
1/4 c. lemon juice
3/4 c. vinegar
4 cloves garlic, minced
1 1/2 teaspoons dried thyme
1 1/2 teaspoons dried basil
1 1/2 teaspoons dried oregano
1 teaspoon salt
1 teaspoon ground black pepper
1 loaf Italian bread
Directions:
1. Combine all the ingredients except the bread in a ziploc bag and mix well. Marinate the meat for at least 24 hours, turning the bag over occasionally.
2. Remove meat from the marinade and place on skewers. Grill the skewers for 8 minutes, turning every few minutes.
3. To serve, fold the bread over the the skewer and pull the skewer out.

2 slices whole wheat bread
2 slices American cheese
1/4 can pineapple chunks, drained
1 tbsp. olive oil mayo
Spread mayo on one side of one slice of bread; top with cheese and pineapple. Leave open faced on a cookie sheet. Pop in the oven under the broiler until cheese is melted and and other slice of bread is toasted. Remove and put the sandwhich together toasted side of plain slice touching pineapple. Flip sandwhich and return to oven until browned.

either a precooked chicken breast or leftover chicken breast seasoned with Mrs. Dash Fiesta Lime seasoning
Spread guacamole on the softened flour tortilla, leave some room near the edges
Put a layer of lettuce down
Put the tomatoes on top of the lettuce
about 1/3 from the edge put on the chicken cut in strips
for a little extra flavor you could sprinkle a little more Mrs. Dash Fiesta Lime seasoning
fold short edge over chicken and roll up like making a burrito

Our favorite out here in WA is called the chicken burger:
2 chicken fillets
2 eggs
4 oz flour
1/2 teaspoon cayenne pepper (it’s what makes this sandwich)
salt/pepper to taste
mayo
lettuce
tomato and the buns of course!
Absolutely delicious!!! seriously! You just fry them up in a pan and they are wonderful!

In our area a medley of grilled veggie put in a section of nice artisan bread with cheese of your choice and then grilled so that the bread and cheese are cooked and then a side of gingered mayo mustard to spread on the sandwhich
