Instant Pot Desserts
I’ve been in love with my Instant Pot for years now. And I’ve made all sorts of things in it. But one of my favorite things to make in a Pressure Cooker is desserts. We’ve made some seriously awesome desserts in our Instant Pot, especially cheesecakes!
I’ve ALWAYS been a huge fan of Carrot Cake. We used to work at The Cheesecake Factory when we were much younger, and they had THE BEST Carrot Cake there! A couple years ago, we shared a Carrot Cake Cupcake Recipe on this site. We just made it the regular way, no Instant Pot. But I loved the idea of having smaller portions of the Carrot Cake so you don’t have to commit to one giant piece! So, we thought it would be fun to share this recipe for these Mini Instant Pot Carrot Cake Bites!
Instant Pot Carrot Cake Bites
We have made this Pressure Cooker Recipe super easy by using store bought cake mix and store bought cream cheese frosting. It literally only takes about 5 minutes to mix everything together and get it cooking in your Instant Pot! Here is what you’ll need to get started:
- 1 cup water
- 1 box, 15.25 oz, carrot cake and ingredients to make cake (oil, water and eggs)
- 1 tub, 16 oz, cream cheese frosting
- 1/4 cup chopped walnuts
Equipment You’ll Need For Instant Pot Carrot Cake Bites
- Instant Pot- Obviously!
- Trivet – this will go at the bottom of your Instant Pot to hold the Silicone Mold.
- Silicone Mold – You will pour the Carrot Cake Batter into this to give the bites their shape.
- Cooking Spray- Do NOT forget to spray your Silicone Mold before putting the batter in!
Notes, Tips and Variations
- We didn’t use any foil in this recipe and feel like it helped out with the results.
- If you aren’t a fan of walnuts, or are allergic, you can certainly omit them from this recipe.
- Sprinkle a little bit of cinnamon on the Cream Cheese Frosting for a little extra flair!
- This recipe makes 21 Carrot Cake Bites. I wasn’t sure if the carrot cake would bubble or bulge out of the mold, so I just did them in single batches of 7. But, if you have two molds, you could probably stack the molds since then didn’t bulge out.

Instant Pot Carrot Cake Bites
Equipment
- Pressure Cooker
- Silicone Egg Mold
- Trivet
- Cooking Spray
Ingredients
- 1 cup water
- 1 box 15.25 oz, carrot cake and ingredients to make cake (oil, water and eggs)
- 1 tub 16 oz, cream cheese frosting
- 1/4 cup chopped walnuts
Instructions
- Prepare cake according to package directions.
- .Before baking, add 1 cup water to the instant pot.
- Grease egg cups with nonstick cooking spray and use a 3 tablespoon portion scoop to scoop batter into each up.
- Place the pan onto the trivet and carefully lower it into the pot. Place the lid onto the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 12 minutes. When cooking is complete, quick release pressure and carefully open pot.
- Remove trivet and pan from the pot and set aside to cool for 2-3 minutes. Flip pan to remove cake bites from the pan. Set aside to cool completely.
- Add water to the instant pot, about 1/2 cup. Re-spray the pan with cooking spray and add batter to the pan and repeat the process twice.
- Once all cake bites are cooled, place frosting into a bag fitted with a 1M tip. Pipe frosting onto each cake bite and sprinkle with chopped walnuts. Serve immediately or store loosely covered until ready to serve.
