What are some of your favorite summer activities? One of our favorite things to do is to invite my husband’s parents over to our house for swimming and dinner. They usually come over in the early afternoon and we gear up to go to the pool. My husband and his dad play a set or two of tennis while the rest of us get started in the pool. After a bit of tennis, they jump in the pool to cool of as well and we all have a great time. The kids love it!
After a bit of swimming we usually get out and sit around the pool to drink a couple of beers before motivating to go back home. We get back to our house around 4pm. At this point, we are usually all pretty hungry but it isn’t quite dinner time. So, I make sure that I always have an appetizer to munch on before we get the grill going.
I like to try to change it up a bit and have something different. It is sometimes a challenge to find an appetizer that is easy to prepare and that everyone will love. With swimsuit season upon us I wanted to try to skinny up one of my favorite appetizer recipes. This recipe was a huge hit when I made it for everyone.
The recipe is for a Skinny Buffalo Chicken Dip. I think that dips are great appetizers for your guest because they can have control over how much they want to eat. They can put a little or a lot on their cracker and dips are easy for everyone to sit around and share. They promote interaction with each other and good conversation. Dips also keep well, so you can save whatever you don’t use for a midnight snack later!
I substituted Greek yogurt for sour cream to lighten up this family favorite. I don’t think anyone missed the sour cream, leaving less calories for some dessert later on.
Skinny Buffalo Chicken Dip
Ingredients
- 1 cup white cheddar cheese shredded
- 1/4 cup blue cheese
- 1/4 cup buffalo sauce
- 8 oz shredded chicken
- 6 ounces plain Greek yogurt
- Celery and Van’s Simply Delicious® Crackers for dipping
Instructions
- In a small saucepan heat all ingredients except cheese. When mixture is heated through add the cheeses until melted. Pour mixture into an oven safe dish. Top with a bit of blue cheese and place under a broiler for just a couple of minutes. Serve warm with celery and Van's crackers.
