It is no secret that I am a huge football fan. During the months of September through January you will find me cheering on the Colts on Sundays and the Boise State Broncos on Saturdays. Sometimes I even watch Notre Dame because it’s my husband’s team.
I remember the first time I went up to South Bend for a Notre Dame game. My husband’s family has season tickets and they invited us to come up, attend the game and enjoy tailgating before kickoff. Is there anything quite as special as a college football tailgating party? No matter what stadium parking lot your are in, the feeling and energy of the crowd is something I have always found to be, well, just SO COOL!
Watching sports is best done in the company of others. It is great to have someone to cheer with. This true whether you are actually at the game or in your home hosting a watching party. Aside from the camaraderie of your fellow fans, the best part of all of this is, of course, the food. I have walked around other tailgate parties just to smell and see all of the delicious foods available. I often see tailgaters that seem to have been doing this for generations. They are pros and they food they are offering is out of this world.
During the hustle of game day, it I find it important to find a balance between scoring a touchdown with to food I am offering, and also having enough time to enjoy the time with my friends and family. I have realized that you don’t need to be a tailgate pro with years of experience to wow everyone that stops by your party in the parking lot or at home in your living room.
My secret ingredients are Ball Park® Flame Grilled Patties and Tyson® Crispy Strips that I always keep on hand from Sam’s Club.
With the Ball Park Flame Grilled Patties, I like to make a burger bar. Burger bars are perfect for situations like these because the patties are super easy to cook, and you can offer endless variables to your guests to put on top of their creation. Burgers are also easy to eat, which is important in a situation where there may be limited seating. Having toppings and bun options is great for a large crowd because everyone always enjoys a customized burger!
To really wow the crowd, I use Tyson Crispy Strips to make my Chicken and Cornbread Bites with Homemade Honey Mustard Sauce. By using help from Tyson I can make these very quickly and get back to watching the game with my friends and family. They look very fancy but are actually very simple to make. The sauce is a homemade honey mustard that could also be used for a light salad.
Chicken and Cornbread Bites with Homemade Honey Mustard Sauce
Ingredients
- Cornbread muffins Made from your favorite recipe or according to a box mix directions
- Tyson Crispy Strips
- 1/4 cup honey
- 1/4 cup mayonnaise
- 1/8 cup Dijon mustard
- 1/8 cup yellow mustard
- 1 tablespoon white distilled vinegar
- 1/4 teaspoon cayenne pepper
- pinch of salt
Instructions
- Bake Tyson Crispy Strips according to package directions and cut into small bite size pieces.
- Wisk together all ingredients for honey mustard sauce in a small bowl and set aside.
- When ready to assemble, place a small amount of honey mustard sauce on top of a mini-cornbread muffin. Top it with a small piece of a crispy strip. Secure with a toothpick. Drizzle more honey mustard sauce on top.
