  • 1 tsp. Olive oil
  • 2 lb Ground Beef or Turkey
  • 2 1/2 TBSP Taco Seasoning or 1 package
  • 3 tsp minced garlic
  • 1/2 tsp red pepper flakes
  • 1 jar salsa 16oz
  • 4 C chicken broth
  • 4 peppers any color seeded and chopped
  • 2 Roma tomatoes chopped
  • 1 onion diced
  • 3 C shredded cheddar cheese
  • 16 oz rigatoni pasta
  • Sour Cream optional
  • Cilantro optional


  1. Place Instant Pot to Saute mode and add olive oil. Add peppers, onion and garlic and cook for a few minutes. Add ground beef or turkey and cook through. Add the taco seasoning and red pepper flakes and stir well.
  2. Turn off pressure cooker.
  3. Add Salsa, broth and pasta. Stir to combine.
  4. Secure lid and turn Instant Pot back on. Set on manual high pressure for 5 minutes.
  5. When cooking time is finished, quick release the pressure. Take lid off and add cheese to the pot. Stir to combine and to melt cheese.
  6. Serve garnished with tomatoes, cilantro, sour cream and more shredded cheese.
