Instant Pot French Dip Sandwich

This Instant Pot French Dip Sandwich gives you "fall apart" tender meat in a fraction of the time it takes in a slow cooker. Perfectly seasoned chuck roast and onions are prepared in your Pressure Cooker and served on a hoagie roll with melted provolone cheese. Serve with Au Jus for an authentic French Dip experience!

Ingredients

  • 2 tablespoons vegetable oil
  • 1 chuck eye beef roast about 2.5 to 3 lbs (mine was 3.18lbs)
  • 2 teaspoons salt
  • 1 teaspoon garlic powder
  • 2 large onions sliced
  • 2 cups beef broth
  • 1 bay leaf
  • 6 hoagie buns
  • 6 slices provolone cheese
  • butter

Instructions

  • Add oil to instant pot and set to saute. Add beef roast and sear on both sides until browned. Carefully remove meat from pot and set aside.

  • Add onions and continue to sauteĀ until tender.

  • Add broth and bay leaf. Use wooden spoon to scrape up brown bits of onions and beef from bottom of pan. Return meat to pot and add seasonings.
  • Place the lid on the instant pot and seal shut. Close the pressure release valve and seal shut. Set the pot to manual, high pressure for 100 minutes.

  • When cooking cycle is complete, let pressure naturally release for 30 minutes. Open pot and carefully remove meat and shred.

  • Set the Instant Pot to saute and let the remaining cooking broth come to a boil. This will be your Au Jus.
  • Add meat to a hoagie bun and top with a slice of cheese. Add butter to the top bun and broil for 2-3 minutes until bun is crispy and cheese is melted. Serve with au jus for dipping.
