INSTANT POT CAULIFLOWER SOUP
PRESSURE COOKER RECIPE!

– 2 tablespoons butter – 1 onion chopped – 1 tablespoon minced garlic – 1 large head cauliflower chopped (about 2-1/2 lbs) – 2 cups chicken broth – 1 teaspoon salt – 1 teaspoon dry thyme – 1/2 teaspoon ground pepper – 1 brick 8 oz, cream cheese, cubed – 1/2 cup shredded cheddar cheese – chopped green onions optional for serving.
SMOOTH AND CREAMY!
1. Add butter, onion and garlic to instant pot. Set to saute and cook until onion is tender, about 3-4 minutes. 2. Add cauliflower, broth and seasoning. Place the lid on the instant pot and seal shut. Close the pressure release valve. 3. Set instant pot to manual, high pressure for 8 minutes. When cooking cycle is complete, quick release pressure. Carefully open pot and mash cauliflower. 4. Stir in cream cheese until melted. If necessary, return to saute mode to continue to heat. 5. Serve topped with shredded cheddar cheese and green onions.
