INSTANT POT CHICKEN & RICE
EASY FAMILY DINNER!
– 1lb chicken breast – 1 tablespoon oil – 1 cup sliced mushrooms – 1 cup matchstick carrots – 1/4 cup diced onions – 1 tablespoon minced garlic – 1 teaspoon thyme – 1 teaspoon salt – 1/2 teaspoon pepper – 2 cups chicken broth – 1 cup uncooked rice (brown or white, see cooking notes) – chopped fresh parsley (optional)
EASY PRESSURE COOKER RECIPE!
1. Place oil and chicken in the Instant Pot and saute, browning each side of the chicken. 2. Add mushrooms, carrots, onions, garlic and spices into the pot. 3. Pour in broth and rice and mix well. 4. Place the lid on the instant pot and seal shut. Close the pressure release valve. 5. For brown rice (package will say it needs 35-40 minutes to cooset the Instant Pot to manual, high pressure for 20 minutes. For white rice (package will say it needs 15-20 minutes to cook), set the Instant Pot to manual, high pressure for 10 minutes. 6. When cooking cycle is complete, quick release pressure and open pot. Let set for a few minutes and use 2 forks to shred chicken and mix together. 7. Serve topped with fresh chopped parsley if desired.
