Instant Pot Hoppin John Soup

- 12/ cup diced onion
- 1/2 cup diced celery
- 1/2 cup diced green pepper
- 2 tablespoons butter
- 1 tablespoon minced garlic
- 1 cup diced ham
- 1 lb dry black eyed peas
- 4 cups chicken broth
- 1 teaspoon salt
- 1/2 teaspoon ground pepper
- 1 teaspoon cayenne
- 1 teaspoon thyme
- 2 cups white rice cooked and warmed
- chopped green onion for serving
Add onion, celery, green pepper, garlic and butter to the instant pot.
Saute until onions are tender and translucent.
Add ham, peas, chicken broth, and spices.
Place the lid on the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 25 minutes.
When cooking cycle is complete, quick release pressure and open instant pot
