Ingredients

  • 12/ cup diced onion
  • 1/2 cup diced celery
  • 1/2 cup diced green pepper
  • 2 tablespoons butter
  • 1 tablespoon minced garlic
  • 1 cup diced ham
  • 1 lb dry black eyed peas
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 1 teaspoon cayenne
  • 1 teaspoon thyme
  • 2 cups white rice cooked and warmed
  • chopped green onion for serving

Instructions

  • Add onion, celery, green pepper, garlic and butter to the instant pot.
  • SauteĀ until onions are tender and translucent.
  • Add ham, peas, chicken broth, and spices.
  • Place the lid on the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 25 minutes.
  • When cooking cycle is complete, quick release pressure and open instant pot
