Ingredients

  • 2 tablespoons oil
  • 1 tablespoon minced garlic
  • 1/2 chopped onion
  • 4 bone-in chicken thighs
  • salt and pepper
  • 2 lemons
  • 1 cup chicken broth
  • 1-1/2 teaspoon Italian seasoning
  • 3 tablespoons butter cut into small squares

Instructions

  • Turn your pressure cooker on to the saute mode. Add olive oil, and onions saute until the onions start to get translucent, about 3-4 minutes. Add garlic and stir until fragrant, about 30 seconds. Season chicken with salt and pepper and saute on both sides until browned, about 3 minutes each side.
  • While chicken is searing, zest one of the lemons. Add lemon juice, zest, chicken broth and Italian seasoning into the pot. Place butter over the chicken.
  • Secure the lid on the pressure cooker and make sure that it is sealed. Close the pressure release valve. Set the pressure cooker to manual, high pressure for 10 minutes.
  • When the cooking cycle is finished, allow the pressure to naturally release for 5 minutes before opening the lid.  Remove chicken to a serving platter. If you would like to thicken the sauce, place the pressure cooker on the saute mode and bring to a boil until thickened.
  • Pour sauce over chicken. Slice remaining lemon into rounds and serve on top of the chicken.
