1 1/2lbsboneless skinless chicken breastscut into 1 1/2 inch cubes
1/4cupolive oil
2Tbspfresh lemon juice
1Tbspapple cider vinegar
2clovesminced garlic
2tspdried oregano
1/2tspdried basil
1/2tspdried thyme
1/2tspground coriander
Salt and freshly ground black pepper to taste
1medium zucchinisliced
1large red onioncut into wedges
Tzatziki Sauce
1medium cucumber peeled and seeded
1tspsalt
1 1/2cupsGreek yogurt
1cloveminced garlic
1 1/2Tbsplemon juice
2tspfresh dillchopped

Directions
In a large bowl, mix spices, vinegar, oil and lemon juice together. Add chicken and make sure the mixture is coating all pieces. Cover with plastic wrap and refrigerate for one to two hours to marinate.
When ready to build your skewers preheat your grill to medium-high heat and then drizzle a little olive oil on the vegetables . Sprinkle veggies with some salt and pepper. Alternate veggies with your chicken pieces when assembling your kebobs.
When your grill is preheated brush a little olive oil over the grates, cook skewers until the chicken reaches at least 165°It should take about 8-9 minutes. Serve with tzatziki sauce and enjoy!
For Tzatziki
Slice cucumber in large pieces and pulse in a food processor until you achieve small chunks. You could alternately chop in fine pieces with a knife if you prefer. Sprinkle with a little salt and pour onto a plate covered with paper towels to soak up moisture.
In a small mixing bowl combine yogurt, lemon juice, dill and garlic. Add cucumber and store in an airtight container in the refrigerator for up to a week.
