Ingredients
1tablespoonoil
1lbbeef stew meat
4cupsbeef broth
2potatoespeeled and cut into 1/2" cubes
1bag12 oz, frozen mixed vegetables
-a combination of peascarrots, corn and green beans
1teaspoonrosemary
1teaspoonthyme
1teaspoonsalt
1/4teaspoonblack pepper
2tablespoonscornstarch dissolved in 1/4 cup cold water
biscuits for serving
Instructions
Add oil and meat to instant pot and set to saute. Heat until meat is browned. Add broth, potatoes, vegetables and spices. Mix well.
Place the lid on the instant pot and seal shut. Close the pressure release valve. Set instant pot to manual, high pressure for 10 minutes. When cooking cycle is complete, naturally release pressure for 10 minutes before opening pot.
If mixture it too thin, set the Instant Pot to saute and add the cornstarch slurry. Mix well and heat until bubbling and thick. Remove from heat and serve with biscuits.
