Instant Pot Potato Soup
Instant Pot Potato Soup is the perfect, simple loaded potato soup recipe that is ready in 20 minutes! This recipe is loaded with potatoes, cheese and bacon.
- 4 strips bacon raw cut into small pieces
- 1 small onion diced
- 6 cups potatoes cut into 1/2" pieces
- 4 cups chicken broth
- 1 teaspoon salt
- 1 teaspoon basil
- 1/4 teaspoon pepper
- 1 cup half and half
- 2 tablespoons cornstarch dissolved in 1/4 cup cold water
- shredded cheddar cheese
- diced green onions
Add bacon and onion to instant pot and saute until bacon is cooked. Add potatoes, broth, salt, and basil and mix well.
Place the lid on the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 5 minutes.
When the cooking cycle is complete, quick release pressure.
Open the pot and carefully stir in half and half.
Set the pot to saute and add the cornstarch. Heat until bubbly and liquid begins to thicken.
Remove from heat and serve topped with shredded cheese and chopped green onions.
