Ingredients

  • 1 tablespoon oil
  • 1 lb beef stew meat
  • 4 cups beef broth
  • 2 potatoes peeled and cut into 1/2" cubes
  • 1 bag 12 oz, frozen mixed vegetables
  • -a combination of peas carrots, corn and green beans
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 tablespoons cornstarch dissolved in 1/4 cup cold water
  • biscuits for serving

Instructions

  • Add oil and meat to instant pot and set to saute. Heat until meat is browned. Add broth, potatoes, vegetables and spices. Mix well.
  • Place the lid on the instant pot and seal shut. Close the pressure release valve. Set instant pot to manual, high pressure for 10 minutes. When cooking cycle is complete, naturally release pressure for 10 minutes before opening pot.
  • If mixture it too thin, set the Instant Pot to saute and add the cornstarch slurry. Mix well and heat until bubbling and thick. Remove from heat and serve with biscuits.
