Ingredients

  • 4 strips bacon raw cut into small pieces
  • 1 small onion diced
  • 6 cups potatoes cut into 1/2" pieces
  • 4 cups chicken broth
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/4 teaspoon pepper
  • 1 cup half and half
  • 2 tablespoons cornstarch dissolved in 1/4 cup cold water
  • shredded cheddar cheese
  • diced green onions

Instructions

  • Add bacon and onion to instant pot and saute until bacon is cooked. Add potatoes, broth, salt, and basil and mix well.
  • Place the lid on the instant pot and seal shut. Close the pressure release valve. Set the instant pot to manual, high pressure for 5 minutes.
  • When the cooking cycle is complete, quick release pressure.
  • Open the pot and carefully stir in half and half.
  • Set the pot to saute and add the cornstarch. Heat until bubbly and liquid begins to thicken.
  • Remove from heat and serve topped with shredded cheese and chopped green onions.
