Ingredients

  • 1 tsp. Olive oil
  • 2 lb Ground Beef or Turkey
  • 2 1/2 TBSP Taco Seasoning or 1 package
  • 3 tsp minced garlic
  • 1/2 tsp red pepper flakes
  • 1 jar salsa 16oz
  • 4 C chicken broth
  • 4 peppers any color seeded and chopped
  • 2 Roma tomatoes chopped
  • 1 onion diced
  • 3 C shredded cheddar cheese
  • 16 oz rigatoni pasta
  • Sour Cream optional
  • Cilantro optional

Instructions

  • Place Instant Pot to Saute mode and add olive oil. Add peppers, onion and garlic and cook for a few minutes. Add ground beef or turkey and cook through. Add the taco seasoning and red pepper flakes and stir well.
  • Turn off pressure cooker.
  • Add Salsa, broth and pasta. Stir to combine.
  • Secure lid and turn Instant Pot back on. Set on manual high pressure for 5 minutes.
  • When cooking time is finished, quick release the pressure. Take lid off and add cheese to the pot. Stir to combine and to melt cheese.
  • Serve garnished with tomatoes, cilantro, sour cream and more shredded cheese.
