LEMON GARLIC CHICKEN

– 2 tablespoons oil
– 1 tablespoon minced garlic
– 1/2 chopped onion
– 4 bone-in chicken thighs
– salt and pepper
– 2 lemons
– 1 cup chicken broth
– 1-1/2 tsp Italian seasoning
– 3 tbsp butter cut into small squares
Turn your pressure cooker on to the saute mode. Add olive oil, and onions saute until the onions start to get translucent, about 3-4 minutes. Add garlic and stir until fragrant, about 30 seconds.
Season chicken with salt and pepper and saute on both sides until browned, about 3 minutes each side.
While chicken is searing, zest one of the lemons. Add lemon juice, zest, chicken broth and Italian seasoning into the pot.
Place butter over the chicken. Secure the lid on the pressure cooker and make sure that it is sealed. Close the pressure release valve. Set the pressure cooker to manual, high pressure for 10 minutes.
When the cooking is done, allow to naturally release for 5 minutes before opening the lid. Remove chicken. If you would like to thicken the sauce, place the pressure cooker on the saute mode and bring to a boil until thickened.
Pour sauce over chicken. Slice remaining lemon into rounds and serve on top of the chicken.
