Have you ever had a happy mistake when creating new recipes? This is exactly what happened the other day when I was creating a new summer coffee drink. My oops turned into one of the best coffee drinks I have ever made! I froze some of my new International Delight Iced Coffee into ice cube trays. I love substituting my ice with frozen coffee to make iced coffee drinks a little stronger. What happened this time was the frozen coffee turned into a slushy mix and made a delicious drink! Here is how I made it:
First, gather all your ingredients.
Make a half tray of coffee ice cubes by freezing International Delight Iced Coffee. I used Vanilla, but you can use whatever flavor you would like.
Pour about 1/2 cup of milk into your cup, over the ice.
Add your International Delight Iced Coffee, leaving room for your cream.
Add International Delight York Peppermint Patty Creamer to your drink. I added a couple of tablespoons of the cream as well as a drop of peppermint extract because I wanted it to be really minty!
I added some chocolate syrup because I had the Vanilla International Delight Iced Coffee on hand. If you have the mocha flavored you can skip this step! Then I crushed the ice cubes with a large spoon allowing them to turn into a slushy consistency.
Top it with some whipped cream and chocolate and there you go, your own Mint Mocha Slushy!
I found my International Delight Iced Coffee at Walmart, but I have seen it at almost all of the places I go to grocery shop! At $4 for a half gallon, it is a great bargain. If I go to a coffee shop to buy an ice mocha, it will cost me about $5 for one cup!

WOW…love the ice cube idea. I actually make ice tea cubes so my iced tea does not become diluted…so naturally, iced coffee ice cubes would be the same!!! One of those why didn’t I think of that moments!!! TY for sharing the great images and recipe!!!
