As summer is coming to an end my son is also approaching the end of the Percy Jackson and the Olympians series, so we are celebrating by introducing the kids to some Greek food!
We made super simple Greek Chicken Kebabs with Tzatziki Sauce!
Thank you Disney Book Group for sponsoring this post.
Can I just say that this summer has flown by! The kids are getting ready to go back to school NEXT THURSDAY! We had many fun adventures these past couple of months and I am not so sure I am ready to start school back up again.
Speaking of adventures, we just got back from a three-week trip to Idaho and Montana. We visited family, did a lot of hiking, relaxed and read a lot! My son is devouring books this summer and it is making me so happy to watch it! I am so excited that he has inherited my love of reading.
At the beginning of the summer, my son started reading the Percy Jackson and the Olympians series by Rick Riordan. He loves adventures and is really into series books right now, so this middle-grade pentalogy was perfect for him to start his summer reading.
As mentioned earlier, we have done a bit of traveling over the past couple of months and Jonah has been bringing his Percy Jackson books with him. He is currently on book 4: The Battle of the Labyrinth. He really seems to enjoy all the action and adventure in the series. The books engage him and keep him reading, which is wonderful. He normally is drawn to non-fiction, which is great don’t get me wrong, but it’s nice for him to enjoy some fictional adventures every once in a while.
The series is centered around Greek mythology so along the way we have been learning about Greek gods. Last month I shared our DIY Greek God Corner Bookmarks with you and I hope you liked them. I invite you to visit ReadRiordan.com to learn more about the Percy Jackson series as well as his other books, which are perfect for summer reading!
Because he is nearing the end of the series, I thought it would be fun to introduce the kids to some Greek food. We have been talking a lot with the kids about healthy eating and limiting processed foods so introducing some Greek food into our home is the perfect thing! I think Greek food is extremely flavorful and it brings a lot of wholesome food to the table.
I started out our Greek food journey with a really simple recipe that I know would be a good introduction to Greek flavors for the kids, Greek chicken with tzatziki sauce.
Easy Greek Chicken Kebabs with Tzatziki Sauce Recipe
Ingredients
Kebabs
- 1 1/2 lbs boneless skinless chicken breasts cut into 1 1/2 inch cubes
- 1/4 cup olive oil
- 2 Tbsp fresh lemon juice
- 1 Tbsp apple cider vinegar
- 2 cloves minced garlic
- 2 tsp dried oregano
- 1/2 tsp dried basil
- 1/2 tsp dried thyme
- 1/2 tsp ground coriander
- Salt and freshly ground black pepper to taste
- 1 medium zucchini sliced
- 1 large red onion cut into wedges
Tzatziki Sauce
- 1 medium cucumber peeled and seeded
- 1 tsp salt
- 1 1/2 cups Greek yogurt
- 1 clove minced garlic
- 1 1/2 Tbsp lemon juice
- 2 tsp fresh dill chopped
Directions
In a large bowl, mix spices, vinegar, oil and lemon juice together. Add chicken and make sure the mixture is coating all pieces. Cover with plastic wrap and refrigerate for one to two hours to marinate.
When ready to build your skewers preheat your grill to medium-high heat and then drizzle a little olive oil on the vegetables. Sprinkle veggies with some salt and pepper. Alternate veggies with your chicken pieces when assembling your kebobs.
When your grill is preheated brush a little olive oil over the grates, cook skewers until the chicken reaches at least 165°F. It should take about 8-9 minutes. Serve with tzatziki sauce and enjoy!
For Tzatziki
Slice cucumber in large pieces and pulse in a food processor until you achieve small chunks. You could alternately chop in fine pieces with a knife if you prefer. Sprinkle with a little salt and pour onto a plate covered with paper towels to soak up moisture.
In a small mixing bowl combine yogurt, lemon juice, dill and garlic. Add cucumber and store in an airtight container in the refrigerator for up to a week.
