My family loves asparagus! It is one of those vegetables that we can all agree on. My husband puts in on the grill, we add it to pastas, we eat it steamed, there are so many delicious ways to make asparagus. Of all the ways we have prepared it, this Everything Bagel and Garlic Roasted Asparagus with Parmesan Cheese recipe is my favorite!

Asparagus is low in calories and has a lot of nutritional benefits including high fiber, folate and vitamins A, C and K. This vegetable is low in sodium and helps lower blood pressure. Not all asparagus is created equal and we have seen some in the grocery store that we would consider questionable. Some of the highest quality asparagus we have eaten comes from Michigan.
Michigan Asparagus is grown by Michigan farmers, sold fresh in food stores and farm stands throughout the Midwest. 120 Michigan families harvest nearly 9,500 acres of land annually, yielding approximately 2,100 pounds of Michigan Asparagus per acre.
How to Choose the Best Asparagus
In the past I have found it a little difficult to find good asparagus. I personally prefer the larger asparagus because I like mine with a little crunch. Apparently I was right! The larger diameter spears of asparagus are actually more tender than the skinny ones! Michigan Asparagus suggests looking for firm, fresh, spears with closed, compact tips in uniform diameter, so that all of them are equally cooked and you can avoid having some cooked before others.
Can you Freeze Asparagus?
Yes! According to MichaganAsparagus.org asparagus can be easily frozen. They suggest that you wash it thoroughly and trim off the ends. You can either leave the spears whole or cut them into 2-inch pieces. You will need to blanch them in boiling water for about 1 to 2 minutes, don’t over blanch them. Drain and pat dry and them pack into a freezer bag or air-tight container. Use within eight months and use frozen, not thawed.

- minced garlic
- everything bagel seasoning

How to Roast Asparagus in the Oven
This recipe is super simple to make and it uses just a baking sheet so the cleanup is really easy! Basically you preheat the oven to 400 degrees, combine all the ingredients and spread it on a baking sheet. It takes about 10-15 minutes to roast and your delicious side dish is ready for your family!

- 1 pound Michigan Asparagus woody ends trimmed off
- 1 tablespoon extra virgin olive oil
- 3 cloves minced garlic about 1 ½ teaspoons
- 1 teaspoon everything bagel seasoning divided
- ¼ teaspoon salt
- ¼ teaspoon freshly cracked pepper
- ¼ cup shredded parmesan cheese

Preheat the oven to 400 degrees.

In a large bowl combine asparagus, olive oil, garlic, ½ teaspoon everything bagel seasoning, salt and pepper. Using your hands, combine to coat asparagus.

On a baking sheet lined with parchment paper, spread asparagus out on the pan and pour any remaining seasoning from the bowl onto the asparagus. Sprinkle parmesan cheese over asparagus and sprinkle with remaining everything bagel seasoning.

Bake for 10-15 minutes until asparagus is cooked through and cheese has a nice golden brown color.

Serve immediately.
