Frozen Coffee Cream Delight

For this mommy/teacher summer means that I get to spend a lot of time with my family.  I am lucky to be able to put work aside for a couple of months and focus on my kids.  We love to visit the zoo, play outside in the sprinkler, ride our bikes, and make food together.

This summer has been a hot one.  I have been experimenting all summer with frozen drinks and desserts that are refreshing after a long day in the sun.  I am now addicted to International Delight Iced Coffee and I am finding creative ways of incorporating it into my drinks and desserts.  I created this fun, light, frozen dessert that I think you will love!

I give you my Frozen Coffee Cream Delight!

Ingredients

6 Frozen International Delight Iced Coffee Ice cubes (about 1/4 cup poured into ice cube trays, I used Vanilla but you can use any of the three flavors)

1 Cup Whipped Topping

1/4 Cup Chocolate Chips

4 Waffle Cups

Chocolate Syrup for Garnish

Directions

Begin by smashing your International Delight Iced Coffee Ice cubes with a potato masher in a large mixing bowl.

Add your Whipped Topping and stir.

Add Chocolate Chips, and divide mixture into 4 waffle cups.  Place into freezer.

Top cups with whipped cream, chocolate syrup, and chopped chocolate chips and serve!
