Chocolate Cherry Cake Balls

I have never been a huge fan of Chocolate Covered Cherries.  At Christmas time I would often get them as a gift from my dad, and he ended up eating all of them.  I bet he did that on purpose!  It was the cordial cherry, I am not a fan.  I do, however, love cherry preserves and when I first smelled the Chocolate Covered Cherry Air Freshener from Renuzit I thought about them.

I gave my cherries a modern twist by surrounding them with cake and chocolate!  They came out delicious!

Here is how you do it:

Ingredients

Chocolate Cake Mix

1 can Vanilla frosting

Can of Cherry Preserves

Chocolate Chips

Directions

Bake your cake according to the directions on the back of the box and let it completely cool.

After it has cooled, add the cake to a food processor and pulse until it is crumbled.  Add most of the jar of frosting to your cake and mix.

Create balls.  I used a small ice cream scoop to ensure they were all the same size but you don’t have to.

Flatten the ball to form a cup in the middle and place a cherry in it.  Cover the cherry with the cake.

Place on a cookie sheet with wax paper.

When all the balls have been formed place the cookie sheet into your freezer.

Meanwhile, melt chocolate in a small bowl.

After about 10 minutes, take balls out and cover them with chocolate.  Place tray back into the freezer for about a half an hour.

Enjoy!
